Chicken Zucchini Burgers with Spicy Mayo
An easy dinner that may make your kids eat their vegetables ...
These chicken zucchini burgers were the first recipe I shared that went “viral” and for good reason. They’re delicious, easy to make, and packed with vegetables. Most people struggle getting their kids to eat vegetables, but I have the opposite problem! My daughter, Chloe, LOVES zucchini but isn’t as thrilled about chicken. She devoured these, and they’re now a family favorite for kids and adults alike.
I serve them with a spicy mayo which takes it to the next level & a side of baked sweet potato fries (not necessary, but kinda necessary! 😜)
Chicken Zucchini Burgers
Makes 4-6 burgers depending on size
INGREDIENTS:
1 lb ground chicken
2 zucchini, grated (about 2.5 cups)
1 egg
2 tbs red onion, finely diced
2 tbs jalapeño, finely diced seeds & ribs removed
3 scallions, finely sliced (light greens only)
1 tsp salt
1/2 cup panko (you could omit this but it helps bind the burgers — you will have a wetter, looser burger without it)
Olive oil
STEPS:
Grate your zucchini on a box grater (you could do this in a food processor) and wring out all liquid. I do this in a kitchen towel. Don’t skip this step or you will have watery burgers.
Combine all ingredients besides oil & form into burgers
Heat 1-2 tsp olive oil in a non stick pan over medium heat - when the pan is hot add your burgers. Cook about 3 minutes per side until golden brown and cooked through
Serve with spicy mayo, avocado, lettuce, pickles etc. & enjoy!
SPICY MAYO:
1/2 cup mayonnaise
1 small garlic clove, grated
1 tbs sriracha
1 tsp lemon juice
Mix all ingredients!
